Cut a lid from the top of the stale bread, scoop out the inside without piercing the bottom, and break the crumb into small pieces.
Chop the onion and saute it with the ground beef in a pan for 8 minutes.
Add the rice, bread crumb, parsley, salt, black pepper, and cumin to the beef and cook for 4 minutes, stirring.
Fill the hollowed bread with the prepared mixture and close it with the bread lid.
Fry the tomato paste in butter for 3 minutes, loosen it with hot water, and pour it into the pot.
Place the bread in the pot, cover, and cook over low heat for 26 minutes, until it absorbs the sauce.
Rest the dolma for 5 minutes, then slice it with optional yogurt on the side.
💡 Tip: Open the bread like a lid without tearing it apart; if the bottom is pierced, the filling scatters into the pot while cooking.
🍽️ Serving suggestion: Slice the stuffed bread and serve it hot with optional garlicky yogurt and pickles.
