Rinse 1 cup of freekeh and finely chop 1 onion.
Cook the onion over medium heat for 4 minutes.
Add the freekeh and 5 cups of water, then boil for 25 minutes.
Finely chop the parsley and mint and add them during the last 2 minutes.
Squeeze in the lemon after turning off the heat so the herbs do not darken, then serve hot.
💡 Tip: Adding the herbs at the very end protects their color and fresh aroma.
