Boil the water with salt and add the spinach, starting with the stems.
Blanch for 70 seconds, then transfer to cold water.
Squeeze out the water and cut the spinach into 4 cm lengths.
Dry-toast the sesame seeds for 3 minutes until fragrant.
Crush most of the sesame in a mortar and mix with soy sauce and sugar.
Toss the spinach with the sesame sauce and sprinkle with the remaining sesame.
Chill for 5 minutes and serve cold.
💡 Tip: Gently squeeze the spinach after draining; excess water pulls the sauce to the bottom of the plate.
