Soak the asure wheat in plenty of water for 8 hours.
Drain the wheat and soften it with the red lentils in 4 cups of water for 55 minutes.
Thinly slice the onions, fry half of them in half of the ghee or clarified butter until dark golden, and reserve for serving.
Cook the remaining onions, garlic, ginger, lamb, garam masala, turmeric, cumin, and salt in the pot for 8 minutes.
Add 3 cups of water over the meat and cook for 70 minutes, until it pulls apart into fibers.
Add the cooked wheat and lentils to the meat pot and thicken for 25 minutes, stirring.
Mash the haleem with a wooden spoon until it becomes paste-like.
Chop the almonds and slice the lemon, then serve the haleem with fried onions, almonds, and lemon.
💡 Tip: Soak the hulled wheat in advance; Turkish asure wheat works well, but after cooking it must be mashed into the shredded meat.
🍽️ Serving suggestion: Serve haleem hot with fried onions, lemon, and fresh cilantro, using thin lavash on the side instead of plain rice if desired.
