Mix the teff flour, rice flour, and 2 cups of the water in a glass bowl.
Cover the batter and ferment it at room temperature for 24 hours until tangy.
Pour off the excess water on top, then add the remaining water and salt to make a pourable batter.
Lightly oil a nonstick pan with vegetable oil and heat it over medium heat.
Pour the batter into the pan in a spiral and cover with the lid.
Cook the injera without flipping for 3 minutes, until holes open and the surface dries.
Soften the cooked injera between cloths for 10 minutes, then serve.
💡 Tip: Do not stir the batter often with a metal spoon; if the fermentation bubbles collapse, the injera surface will not form its little eyes.
