Mix the flour, sugar, salt, and lemon zest.
Rub the cold butter into the flour until the mixture looks sandy.

Rest the dough in the refrigerator for 20 minutes.
Roll out two thirds of the dough, fit it into the tart tin, and spread the jam over it.
Cut the remaining dough into strips and arrange them over the jam in a lattice.
Bake the crostata at 180°C for 35 minutes, until the edges are golden.
