Make a shortcrust dough with the flour, butter, half of the sugar, 1 egg, salt, and half of the lemon zest.
Rest the dough in the refrigerator for 25 minutes.
Warm the milk with the remaining lemon zest.
Whisk the remaining eggs with the remaining sugar and cornstarch.
Add the hot milk gradually to the egg mixture, then cook for 7 minutes until thick.
Roll half of the dough into the tin, pour in the custard, and cover with the remaining dough.
Scatter the pine nuts over the top.
Bake the torta at 180°C for 35 minutes, until golden.
💡 Tip: Let the custard cool to warm before putting it into the pastry; very hot custard melts the buttery base and makes the bottom greasy.
