Mix the whole sumac with hot water and let it steep for 10 minutes.
Pass the sumac water through a fine sieve and cheesecloth, then transfer it to a pot.
Add the granulated sugar and heat over low heat for 8 minutes, until the sugar dissolves and the color settles.
Add the lemon juice, stir for 2 more minutes, and remove from the heat.
Let the sherbet rest until it reaches room temperature.
Divide it among glasses with ice and serve cold with mint leaves.
💡 Tip: Strain the sumac water through cheesecloth after the fine sieve; any sediment will cloud the sherbet's clean tart taste.
