Rinse the sushi rice until the water runs clear and drain for 20 minutes.
Cook the rice with the measured water and rest it, covered, for 10 minutes.
Fold rice vinegar, sugar and salt into the hot rice and let the rice cool until warm.
Gently mix the crab meat with mayonnaise and sesame seeds.
Cut the nori sheets into long strips.
Press the rice into oval bites, wrap each with nori and leave a hollow on top.
Fill the hollow with the crab mixture and serve with soy sauce and wasabi.
💡 Tip: Wrap the nori close to serving time so the gunkan keeps its crisp edge.
