Cut the lamb shoulder into large pieces and rub with salt, black pepper, thyme, and crushed garlic.
Spread the onion slices on the bottom of the baking dish and place the meat on top.
Put small pieces of tail fat over the meat.
Add the water from the side of the dish and cover tightly.
Slow cook the meat in a 150°C oven for 150 minutes.
Uncover and brown the top at 200°C for 25 minutes.
Rest the meat for 10 minutes, pull into fibers, and serve.
💡 Tip: Sealing the baking dish well in the first stage creates the pit-roast effect; if steam escapes, the meat dries outside and softens late inside.
