Heat the oven to 160°C.
Leave the beef and lamb in large pieces and place them in an oven pot.
Quarter the onions and cut the carrots into large pieces.
Add the vegetables over the meat, then add bay leaves, peppercorns, and salt.
Pour in water until it comes level with the ingredients.
Cover the pot and cook in the oven for 2 hours 30 minutes.
Skim the excess fat from the surface and serve the meat after resting.
