Flatten the beef slices lightly and season with salt and black pepper.
Coat the meat in flour, beaten egg and panko breadcrumbs.
Fry the breaded slices in 180°C oil for 4 to 5 minutes until golden.
Slice the onion thinly and cook with dashi, soy sauce and sugar for 5 minutes.
Cut the breaded slices, place them over the sauce and pour over the remaining beaten eggs.
Cover and cook for 2 minutes until the eggs stay slightly runny.
Spoon the breaded beef and egg sauce over hot rice and serve with spring onions.
