Soak the fine bulgur with 1 cup hot water for 15 minutes.
Grate the onion and gently squeeze out some of its juice.
Knead the bulgur, ground beef, pastes, egg, and spices for 10 minutes.
Add the parsley and shape the mixture into flat oval koftes.
Oil the pan and cook the koftes over medium heat for 6 minutes.
Turn the koftes and brown the other side for 6 more minutes.
Rest for 3 minutes and serve hot.
💡 Tip: Moistening the bulgur with a measured amount of hot water helps the kofte cook in the pan without falling apart.
