Mix the warm water, yeast, and sugar and let it foam for 8 minutes.
Knead a soft dough with the flour, yeasted water, olive oil, and half of the salt.
Let the dough rise for 60 minutes.
Remove the watery seed centers from the tomatoes, then finely chop the tomatoes, onion, and parsley.
Mix the ground beef, chopped vegetables, pepper paste, pomegranate molasses, allspice, black pepper, and remaining salt.
Divide the dough into 6 balls, roll each into a thin oval, and spread the beef filling to the edges.
Bake the lahm bi ajeen in a 230°C oven for 10 to 12 minutes, until the edges brown.
Bring the hot flatbreads to the table with lemon and do not stack them covered, or the dough will soften.
