Gently mix the ground lamb with cumin, cilantro, salt and black pepper.
Shape the mixture into 4 patties and chill for 10 minutes.
Mix yogurt, chopped mint and lemon juice to make the sauce.
Heat a cast-iron pan above 230°C and cook the patties for 4 minutes per side.
Slice the halloumi and fry it in the same pan for 1 minute per side.
Lightly toast the buns and slice the onion thinly.
Fill the buns with mint yogurt, arugula, lamb patty, halloumi and onion, then serve.
💡 Tip: Frying the halloumi in the same pan after the patties lets the cheese pick up the meat's aromatic fat.
