Knead a firm but rollable dough with the flour, water, vegetable oil, and half the salt.
Rest the dough for 20 minutes.
Mix the sattu, mustard oil, lemon juice, ginger, green chilies, and remaining salt.
Open dough balls, fill them with the sattu mixture, and roll them closed.
Roast the litti in a 200°C oven for 28 minutes, turning as they brown.
Roast the eggplants, tomatoes, and potatoes, then peel them.
Mash the roasted vegetables with onion and cilantro to make chokha.
Serve the hot litti with chokha and optional lemon wedges.
💡 Tip: If the sattu filling is dry, add water spoon by spoon; filling that is too wet makes the dough hard to close.
