Wash the trotters with plenty of water, put them in a pot, and add enough water to cover.
Cook the trotters over low heat for 100 minutes, until the meat separates from the bone.
Pull the meat from the bones, strain the broth through a fine sieve, and return it to the pot.
Whisk the yogurt, flour, egg yolk, lemon juice, and crushed garlic.
Warm the liaison with hot trotter broth, then add it gradually to the pot.
Cook the soup over low heat for 15 minutes, stirring.
Foam the red pepper flakes in butter, drizzle over Maras pacasi, and serve hot.
💡 Tip: Do not pour the yogurt liaison directly into boiling broth; tempering it first prevents the yogurt from curdling.
