Knead the semolina, flour, half of the salt, and warm water into an elastic dough.
Divide the dough into 6 balls, oil them with olive oil, and rest for 20 minutes.
Cut the onions, peppers, and tomatoes into small pieces.
Saute the onions and peppers with some of the olive oil for 6 minutes.
Add the tomatoes, tomato paste, cumin, red pepper flakes, and remaining salt and cook for 8 minutes into a thick filling.
Open the dough balls thinly on an oiled surface, add the filling, and fold like an envelope.
Cook each side in a pan for 3 minutes and serve hot.
💡 Tip: Rest the dough on an oiled surface; once elastic, it opens paper-thin without tearing.
