Coarsely chop the green olives and mix with mayonnaise and lemon juice.
Divide the beef into 4 patties and season just before cooking with salt and black pepper.
Heat a cast iron pan above 230°C.
Place the patties in the pan, press them and sear the first side for 2 minutes.
Flip the patties, add cheddar and cook for 2 more minutes.
Toast the cut sides of the buns for 1 minute.
Serve the burgers hot with lettuce, tomato, patty and olive mayonnaise.
