Remove the core of the cabbage, soften the leaves in boiling water for 5 minutes, then transfer to cold water.
Wash the rice, dice the onions small, and cut the lamb into 1 cm cubes.
Mix the lamb, rice, onions, tomato paste, sumac, red pepper flakes, black pepper, and half of the salt in a large bowl.
Thin the thick veins of the cabbage leaves, divide the filling among the leaves, and roll them loosely.
Line the bottom of the pot with a few cabbage leaves and arrange the hez dolmasi tightly.
Add the butter, hot water, and remaining salt, then cover with a plate.
Cook the dolmas over low heat for 58 minutes, until the meat and rice are tender.
Rest the pot for 7 minutes and serve the dolmas with their cooking liquid.
💡 Tip: Do not overboil the cabbage; if the leaves soften but still stay lively, the large Mus-style meat-filled rolls will not fall apart in the pot.
