Soak the dried apricots in warm water for 10 minutes and drain.
Seal the lamb in olive oil for 8 minutes.
Add the onion and soften for 6 minutes.
Add garlic, tomato paste, ginger, salt and pepper and fry for 2 minutes.
Add hot water and cook the meat over low heat for 40 minutes.
Add the apricots to the pot and cook for another 20 minutes.
Let the dish rest for 10 minutes and serve with rice pilaf.
