Bring 3 cups water to a boil in a pot, then turn off the heat.
Add the chamomile to the hot water, cover, and steep for 8 to 10 minutes.
Strain the infusion through a fine sieve; add the sugar while hot and stir until dissolved.
Cool the infusion for 30 minutes at room temperature, then chill for 20 minutes in the fridge.
Add the lemon juice to the cold infusion and stir; do not add lemon while hot.
Fill glasses with plenty of ice, pour in the cold chamomile lemonade, garnish with mint and a thin lemon slice, and serve.
