Divide the ground beef into 4 loose patties and season with salt and black pepper.
Heat a cast iron pan above 230°C.
Sear the patties for 3 minutes per side.
Top the patties with pastrami and Swiss cheese and melt for 1 minute.
Toast the cut sides of the burger buns for 1 minute.
Mix the mayonnaise and Dijon mustard.
Add sauce, lettuce, patty and pickles to the buns and serve hot.
