Divide the ground beef into four loose patties without kneading.
Mix cheddar, cream cheese, mayonnaise and finely chopped roasted pepper to make the pimento cheese.
Heat a cast-iron pan to above 230°C.
Season the patties with salt and black pepper and sear for 3 minutes per side.
Spoon the pimento cheese over the patties and melt for 1 minute.
Toast the brioche buns on their cut sides for 1 minute.
Fill the buns with lettuce, patty, jalapeno and 1 tablespoon of pimento cheese, then serve hot.
