Melt the butter and let it cool until warm.
Beat the eggs, yogurt, and granulated sugar for 3 minutes, until the sugar dissolves.
Foam the baking soda in the lemon juice and add it to the mixture with the warm butter.
Add the wheat flour and salt little by little, kneading into a soft dough that does not stick to the hands.
Rest the dough for 10 minutes, then tear off large pieces and shape them into oval lokum.
Score the tops crosswise with a knife and arrange them spaced apart on an oiled tray.
Bake the cookies at 180°C for 18-20 minutes, until light golden.
💡 Tip: Add the melted butter to the egg mixture while it is warm, not hot; hot fat cooks the eggs and gives the dough an off smell.
