Heat the sour cream in a wide pot over medium low heat for 5 minutes and wait for its natural fat to separate; transfer the separated fat, the smjor, to a separate bowl and keep it warm.
Sift the flour little by little into the remaining sour cream and whisk for 3 minutes; lower the heat to prevent lumps.
Pour in the milk in a thin stream, add the granulated sugar and salt, and cook for 8 minutes over low heat, stirring constantly, until porridge thick.
Melt the butter in a separate small pan and set aside.
Transfer the porridge to a serving bowl, drizzle the reserved smjor and melted butter over it, then serve hot with cinnamon and extra granulated sugar.
💡 Tip: Do not boil the sour cream over high heat, or it will split. Before adding the flour, cook the sour cream gently for 5 minutes until its natural fat separates, which is the source of the smjor. The butter must be melted before serving so it forms a golden pool over the porridge.
