Knead the lamb, onion, herbs, chili, garlic, ginger, spices, and salt for 6 minutes.
Cover the mixture and rest it in the refrigerator for at least 5 hours.
With wet hands, press the mixture around skewers into long cylinders.
Heat the grill or broiler to 220°C and oil the skewers.
Cook the kebabs for 14 minutes, turning, until the edges brown.
Rest the kebabs for 4 minutes and serve with lemon.
