Wash the tripe with plenty of water and place it in a pot.
Boil the tripe for 80 minutes, until tender.
Slice the tripe into thin strips and reserve 1.5 liters of the cooking liquid.
Whisk the flour with milk until smooth and temper it with hot tripe broth.
Add the milky mixture to the pot and cook with the tripe for 15 minutes.
Foam the paprika in butter for 1 minute and drizzle it into the soup.
Serve hot with crushed garlic and vinegar in a separate bowl.
