Roughly chop the tomatoes, onion, and radish, and trim the green beans.
Boil the water, onion, and tomatoes in a pot for 10 minutes.
Add the tamarind paste and fish sauce and stir.
Add the radish and green beans and cook for 8 minutes.
Add the fish pieces and green peppers, then cook over low heat for 10 minutes.
Add the spinach in the last 2 minutes and turn off the heat once the leaves wilt.
Serve the sinigang hot with rice.
💡 Tip: If you cannot find milkfish, use sea bass or sea bream pieces; very thin fillets break apart quickly in the sour broth.
