Soak the kombu in the water for 20 minutes.
Heat the water, remove the kombu before it boils, and add the katsuobushi.
Steep the dashi for 5 minutes and strain it.
Add the soy sauce, apple juice, and salt to the strained dashi and warm over low heat for 5 minutes.
Boil the soba noodles in a separate pot for 5 minutes.
Rinse the noodles in cold water to wash off the starch.
Wilt the spinach in the broth for 1 minute.
Place the soba in bowls, pour over the hot broth, and serve with kamaboko, spring onion, and shichimi.
