Put the beef shank in a pot with water, onion, garlic, salt, and black pepper.
Cook over low heat for 55 minutes, skimming the foam.
Cut the corn cobs into pieces and add them to the pot.
Cut the yuca, carrots, and potatoes into large pieces and add them to the soup, then cook for 20 minutes.
Cut the zucchini into large pieces and add during the last 10 minutes.
When the meat is tender enough to come away from the bone, check the salt.
Serve hot with cilantro, mint, and lime wedges.
