Soak the cracked wheat and chickpeas in separate bowls of cold water for 12 hours.
Drain the wheat and chickpeas, then place them in a heavy bottomed pot with the beef neck, hot water, and half of the salt.
Cook the pot in a 160°C oven for 3 hours, adding half a cup of hot water if the liquid drops.
Separate the meat from the bone and tough connective tissue, then return it to the pot.
Beat and stir the keskek with a wooden spoon for 45 minutes, until the meat fibers blend into the wheat.
Melt the butter in a pan and foam the ground red pepper for 1 minute.
Transfer the keskek to a serving plate and drizzle the pepper butter and black pepper over it.
💡 Tip: If you do not have a stone oven, use a cast iron pot; if the lid does not close well in a home oven, the wheat loses water fast and will not open into fibers while beaten.
