Boil the basmati rice for 12 minutes and drain.
Boil the yellow lentils for 18 minutes until soft and drain.
Grate one onion and squeeze out its juice.
Knead beef mince, rice, lentils, eggs, grated onion, parsley, tarragon, chives, dried mint, turmeric, salt, and black pepper for 10 minutes.
Coarsely chop walnuts, dried plums, and dried apricots.
Divide the mixture into 6 parts and shape large meatballs filled with the walnut fruit mixture.
Fry the remaining onion in oil for 7 minutes.
Add tomato paste, water, and lemon juice and bring the sauce to a boil.
Place the meatballs in the sauce and cook over low heat for 75 minutes, spooning sauce over them without turning.
💡 Tip: Long kneading helps the large meatballs hold their shape without cracking in the sauce.
🍽️ Serving suggestion: Serve hot with tomato sauce, fresh herbs, lavash, or plain rice.
