Cut the chicken into 2 cm cubes and season with salt and black pepper.
Heat the butter and olive oil in a wide pot; saute the chicken over high heat for 5 minutes, until all sides are sealed.
Add the finely chopped onion and cook over medium heat for 4 minutes until lightly pink; add the crushed garlic and turn for 30 seconds.
Add the sliced mushrooms and saute over high heat for 5 minutes, until they release and reabsorb their liquid.
Add 3 cups hot water and wait for it to boil.
Add the cut pasta and cook for 10 to 12 minutes, stirring gently from time to time, until al dente.
Remove from the heat, cover and rest for 5 minutes so the pasta absorbs the liquid.
Garnish with chopped parsley and serve hot.
💡 Tip: Saute the mushrooms over high heat until their liquid evaporates so they do not water down the pot, then add them to the chicken. Do not stir the cut pasta too much, or the doughy texture breaks down.
🍽️ Serving suggestion: Cacik or plain yogurt is an excellent match on the side.
