Divide the beef into 4 patties without kneading and season with salt and black pepper just before cooking.
Heat a cast iron pan or griddle above 230°C.
Place the patties in the pan, press them and sear the first side for 2 minutes.
Flip the patties, add cheddar and cook for 2 more minutes.
Warm the brisket in the pan for 1 minute and toast the cut sides of the buns.
Slice the red onion into thin rings.
Serve the buns with barbecue sauce, patty, brisket, onion and pickles.
💡 Tip: Only warm the brisket, long cooking dries it out and makes the smoke flavor heavy.
