Soak the raisins in warm water for 10 minutes and drain.
Mix the drained curd cheese, labneh, eggs, granulated sugar, lemon zest, vanilla, and raisins.
Melt the butter and stack the baklava phyllo sheets, brushing butter between the layers.
Spread the cheese filling along the long edge of the phyllo, fold the sides inward, and roll it up.
Place the strudel on a tray lined with baking paper and brush the remaining butter over the top.
Bake the topfenstrudel in a 185°C oven for 35 to 38 minutes, until browned.
Rest for 10 minutes, then slice and serve with powdered sugar.
💡 Tip: Do not leave the filling too wet; draining the curd keeps the strudel slices from spreading on the tray.
🍽️ Serving suggestion: Slice topfenstrudel warm, dust it with powdered sugar, and serve with plain Turkish coffee.
