Boil the yellow lentils for 10 minutes until half tender, then drain.
Soak the rice and fine bulgur in hot water for 10 minutes, then drain.
Finely chop the leek, onion, parsley, mint, half of the salt, and black pepper.
Knead the ground beef, grains, lentils, and greens for 5 minutes.
Shape the mixture into large meatballs.
Fry the tomato paste in butter for 2 minutes, then add the water and remaining salt.
Cook the meatballs in the liquid over low heat for 28 minutes and serve hot.
💡 Tip: Knead the meatballs without compacting them too much; rice and bulgur swell as they cook, so an overly firm meatball can crack.
