Whisk the eggs, milk, half the granulated sugar, half the cinnamon, and a pinch of salt in a deep bowl; work for 1 minute until smooth.
Lay the stale bread slices in the mixture for 30 seconds, turn them, and let the other side absorb for another 30 seconds.
Melt the butter in a wide pan over medium-low heat; when the foam subsides, lay in the bread slices.
Cook the first side for 4 minutes, until golden, then turn and fry the other side for 4 more minutes.
Transfer to paper towels to drain the excess fat.
Place the hot slices on a plate, sprinkle with the remaining sugar and cinnamon mixture, and serve.
💡 Tip: The cinnamon and sugar in the mixture soak into the bread during dipping, so immerse each slice for at least 30 seconds. Do not burn the butter over very high heat; medium-low heat gives a golden crust.
🍽️ Serving suggestion: Place the hot slices on a plate and finish with powdered sugar, extra cinnamon, or grape molasses; strong tea goes well alongside.
