Thinly slice the beef and rub it with baking soda and water for 10 minutes.
Add corn starch and 1 teaspoon oyster sauce to the beef and marinate 20 minutes.
Blanch the broccoli in boiling water for 60 seconds and drain.
Make a sauce with chicken stock, the soy sauces, remaining oyster sauce, sesame oil, and starch.
Sear the beef in a very hot pan for 2 minutes and set aside.
In the same pan stir the garlic and ginger for 15 seconds and add the apple juice.
Add the sauce and thicken for 30 seconds, then return the beef and broccoli to the pan.
Serve right away once everything is coated in sauce.
