Cut off the tops of the unripe melons, scoop out the insides with a spoon, and wash them.
Finely chop the onions and mix with ground beef, bulgur, pastes, parsley, mint, black pepper, most of the salt, and half of the oil.
Fill the melons without packing the mixture too tightly and close their lids.
Drizzle the remaining oil over the bottom of the pot and stand the melons upright.
Add the hot water, lemon juice, and remaining salt.
Cover and cook over low heat for 45 minutes.
Rest the stuffed melons for 10 minutes, slice, and serve.
💡 Tip: Do not fill the unripe melons completely; as the bulgur swells, the stuffing expands and the shell may crack.
