Peel the isgin stalks and cut them into 4 cm pieces.
Dice the onion.
Sear the lamb in butter for 8 minutes.
Add the onion and saute for 5 minutes, until softened.
Add the tomato paste, salt, black pepper, and hot water.
Cook the meat covered for 20 minutes.
Add the isgin to the pot and cook for 10 minutes, keeping it slightly firm.
💡 Tip: Add the isgin stalks later, if overcooked their fibers break down and the tart spring herb flavor disappears.
