Slice the beef 3 to 4 mm thick. Mix gochujang, soy sauce, gochugaru, grated garlic, ginger, pear, sugar, and sesame oil for the marinade.
Add the beef slices to the marinade and work it in by hand. Rest in the refrigerator for 30 minutes.
Slice the onion into half moons and heat a wide pan to 180°C over high heat.
Spread the marinated beef and onion in the pan and cook for 6 to 8 minutes, stirring occasionally, until the sauce clings and caramelizes lightly.
Continue sauteing for 3 to 4 minutes until most of the liquid is absorbed.
Remove from the heat and serve with sesame seeds and chopped scallions. It can be eaten wrapped in lettuce.
💡 Tip: Slice the beef thinly and do not crowd the pan; the saute stays glossy instead of watery.
