Mix the gochujang, mayonnaise and soy sauce until smooth.
Drain the kimchi and chop it coarsely.
Divide the beef into 4 patties and season with salt and black pepper.
Heat a cast iron pan above 230°C.
Cook the patties for 3 minutes per side.
Toast the cut sides of the sesame buns.
Serve the burgers with gochujang mayonnaise, lettuce, patty, kimchi and spring onions.
💡 Tip: Lightly draining the kimchi keeps the bun from getting wet while preserving the fermented flavor.
