Steam it in a steamer basket for 18 minutes.
Transfer the couscous to a wide bowl and separate the grains with butter.
Add the raisins and sugar, then steam again for 8 minutes.
Mix with almonds and cinnamon.
Spoon the mesfouf onto warm plates and serve with milk or ayran.
