Peel the potatoes and grate them coarsely.
Squeeze the grated potatoes in a clean cloth to remove excess water.
Toss the potatoes with salt and black pepper.
Heat the butter and vegetable oil in a skillet, then press the potatoes into a single layer.
Fry the first side of the rosti over medium heat for 10 minutes.
Turn it with the help of a flat lid and cook the other side for 8 minutes.
Sprinkle with chives, slice, and serve hot.
💡 Tip: Do not let the grated potatoes sit; once they release water, starch begins to run off and rosti falls apart in the pan.
