Leave the steaks at room temperature for 20 minutes and dry them with paper towels.
Coarsely crack the peppercorns, press them onto both sides of the meat, and salt.
Heat a cast-iron pan very hot and add the vegetable oil.
Sear the steaks for 3 minutes on each side and transfer to a plate.
Soften the shallot in the pan with butter for 2 minutes.
Add the brandy and boil for 1 minute, until the alcohol sharpness evaporates.
Add the beef broth and cream, and thicken the sauce for 5 minutes.
Return the steaks to the sauce, rest for 5 minutes, and serve.
💡 Tip: Coarsely crushing the peppercorns in a mortar gives an aromatic crust that does not burn easily.
