Lightly pound the ribeyes, then rub with salt, black pepper, and mustard.
Slice the onions into thin rings and coat lightly with flour.
Fry the onions in half of the vegetable oil for 8 minutes until crisp, then transfer to paper towels.
Remove excess oil from the pan and sear the steaks for 3 minutes on each side.
Transfer the steaks to a plate and add the butter and beef stock to the same pan.
Boil the sauce for 8 minutes until thickened.
Return the steaks to the sauce and heat together for 4 minutes.
Serve with fried onions and mashed potatoes.
